Whey Protein Pancakes

My new favourite obsession.. Whey protein powder 😀

So I’ve been using whey protein powder after my work outs this week and as it’s the weekend I thought I’d do something new with the powder for a change! This stuff is great and so versatile!! I still can’t believe I indulged in pancakes with a peanut butter “syrup” and “cream” and it contained no sugar while being very high in protein.

The protein powder I used was Impact Whey Protein from myprotein.ie, you can find the like to it here:

For my pancakes I looked up several recipes and couldn’t find exactly what I wanted but most of the recipes were pretty similar so I decided to just take a crack at mixing up my own batter. For the first go I think it turned out pretty good! I’ll keep playing around with it on the weekends and update ya’ll on here if I make some major improvements.

So for this round I used the following added ingredients to my protein powder (and eggs):

 

The flavouring I used was apple pie spice which is just a mix of cinnamon, nutmeg and all spice. You could use whatever you felt like that day. If you wanted something more chocolate-y, try using some cocoa powder! In the glass jar is some psyllium husks for added fiber, but a lot of recipes online call for almond flour or the like so if you want, use that. I was trying to keep the carbs to a minimum and wanted to make a recipe with out any added “flour”.

The end result was AMAZING!

WHEY PROTEIN PANCAKES

INGREDIENTS:

  • 50g whey protein powder of your choice
  • 2 egg whites, 1 whole egg
  • 50g natural greek yogurt
  • 1 teaspoon sugar substitute
  • 2 teaspoons apple pie spice (or flavouring of your choice)
  • 2 teaspoon vanilla extra
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 Tablespoons physillium husks
  • water (to your desired consistency)

“SYRUP”

  • 1 tablespoon butter
  • 30g natural peanut butter

“CREAM”

  • 15g  whey protein powder
  • water (to your desired consistency)

DIRECTIONS:

  1. Place all ingredients for the “pancake” into a mixing bowl except the water. Whisk together until smooth. Add a drop or two of water until desired consistency.
  2. Heat frying pan or griddle on medium high heat, then turn down the heat to medium. Spray with a bit of oil. Pour batter onto frying pan (shapes, and size to your liking!). Cook over moderate heat for 1-2 min until lots of bubbles appear and is cooked enough to flip over. Cook for an additional min (don’t over cook as it will be too rubbery)

For the “syrup”:

  1. Melt butter and peanut butter in a small pan just until butter is melted and peanut butter is incorporated (do not over cook!). This is only to make the “syrup” liquid like to “pour” over the pancakes.
  2. Drizzle the “syrup” over the pancakes.

For the “cream”

  1. Whisk about 15grams of protein powder with a drop or more (to your liking) of water. Whisky until as fluffy or “drizzly” as you like
  2. Add a healthy dollop over the pancakes.
